Whipped Maple Sweet Potatoes
Ingredients
4 cups of sweet potatoes (about 4-5 potatoes)
1 (5oz) can evaporated milk (or 1/2 cup lowfat milk or soymilk)
2 egg whites
1/4 cup sugar-free maple syrup
1/4 cup low calorie sweetener of choice (use less if using stevia, or you could skip the sweetener and simply double the maple syrup!)
1 tsp pumpkin pie spice
1 tsp. cinnamon
1 tsp salt
1 tsp. vanilla extract
1 cup mini marshmallows
Directions
Preheat oven to 375 degrees. Prepare medium-sized shallow baking dish with non-stick cooking spray, set aside.
Wash sweet potatoes. Place potatoes on microwave-safe dish covered with paper towel to absorb excess moisture. Microwave for 5-6 minutes, turning the potatoes over halfway through cooking. Remove potatoes from the microwave and let cool. Peel the potatoes once they are cool enough to handle. (*You could also bake the sweet potatoes in the oven for an hour! No peeling is required this way~ Simply cut the potatoes in half, and scoop out the flesh! )
Place the peeled potatoes in a large bowl and begin to roughly mash potatoes. Once the potatoes are broken down into manageable chunks, add the rest of the ingredients (except for the marshmallows), to the bowl. Using an electric mixer, whip everything together until the potatoes are smooth and creamy.
Transfer mixture to the baking dish and smooth the surface out with a spatula. Bake for 35 minutes, and remove from the oven. Disperse marshmallows evenly over the top and bake for an additional 5 minutes, or until marshmallows are golden brown. Serve immediately and enjoy!
